The Iron Migas Competition is ON!
Last week, we announced that our Bishop Arts and Deep Ellum locations would be holding an “Iron Chef”-style cooking competition to test their culinary imagination and skill.
We asked you to suggest items for the themed ingredients. We carefully weighed all of the weird and wacky, delicious and flavorful comments that you left and the decision has been made!
The two ingredients that our chefs had to incorporate into a Cafe Brazil-style entree are TEXAS PEACHES and GREEN CHILIES.

Grilled Pork Chop with a Peach, Blueberry and Chili Pepper Compote Garlic Mashed Potatoes and Asparagus & Peach Fritters
This tenderly grilled Pork Chop is topped with a sweet and savory Compote comprised of Peaches, Green Chili Peppers, and Blueberries, and is served resting on a bed of Garlic Mashed Potatoes with grilled Asparagus.
Homemade Peach Fritters with an Orange Glaze also accompany this delicious dish. $8.99
Bishop Arts has created…
Sweet Hatch Green Chile Short Ribs
We marinate short ribs overnight in a hatch chilie and peach brine, and then slow roast them for 4 hours. We then lay three tender ribs on a bead of Rice Pilaf filled with chilies and peaches. The special is also served with a Wild Spring Mix tossed in a Peach Vinaigrette. Lastly, we accompany the main entrée with a Hatch Chile Grit cake that is covered with a warm Peach and Bacon salsa. $8.99
We are also offering a Peach Spritzer (Peach Sorbet with a secret soda) and Peach Sorbet for $3.99

Cafe Brazil is holding an Iron Migas Cooking Compeition
At Cafe Brazil, we are huge fans of the culinary game show, show Iron Chef. In each episode, a new challenger chef competed against one of the resident “Iron Chefs” in a one-hour cooking competition based on a theme ingredient.
We thought it would be fun to create a little friendly competition between our stores and hold our own Iron Chef-style cooking competition! In a blatant rip-off of the TV show, we are calling our competition Iron Migas!
To kick start this thing, we need you, our most devoted foodie fanatics, to come up with some suggestions for what our theme ingredient(s) will be. Nothing is off limits – but it needs to be an item we can easily obtain.

Let your imagination run wild and suggest items you want to see our chefs incorporate into a Cafe Brazil-suitable entree. Calamari? Watermelon? Pigs feet? We say, “Bring. It On.” Our corporate management will review all food item suggestions left by you and select one, maybe two, ingredients to be used.
Deep Ellum and Bishop Arts are the first two stores who have bravely volunteered for the challenge. So, let’s hear it foodie fans. What are your suggestions for the wild card ingredient? You have the next 48 hours to leave your suggestions.
